Protein-Packed Flapjack

A simple recipe for a protein-packed flapjack. Lower in sugar than a standard flapjack. Higher in protein than a standard flapjack. Packed full of blitzed seeds so the children will never know they're there. Perfect fuel for hungry children.

Ingredients

  • 75g mixed seeds (pumpkin and sunflower seeds work well)
  • 125g butter
  • 75g coconut/rapadura/unrefined sugar
  • 1 tbsp blackstrap molasses or treacle
  • 175g oats (can choose gluten free oats or quinoa flakes)
  • 50g dried fruit (cut into small pieces if something like dried apricots or prunes)

Method

  1. Pre-heat the oven to 200 degrees centigrade (or 180 degrees centigrade if using a fan oven)
  2. Grind the seeds to a powder in a food processor, nutribullet or coffee grinder
  3. Melt the butter, sugar and molasses in a medium-sized saucepan over a low heat.
  4. Add the oats, dried fruit and ground up seeds.
  5. Stir to combine.
  6. Pour into a baking tin lined with greaseproof paper or into a brownie tin.
  7. Bake for 20-25 minutes until golden brown on top.
  8. Cut into 6 large or 12 smaller portions whilst warm but cool fully before removing from the tin.

Thermomix Instructions:

  1. Pre-heat the oven to 200 degrees centigrade (or 180 degrees centigrade if using a fan oven)
  2. Grind the seeds to a powder in the TM Bowl 20 sec/speed 10
  3. Remove and place in a bowl
  4. Melt the butter, sugar and molasses 2 min/ 100 degrees/speed 1 (repeat if butter not melted)
  5. Add oats, dried fruit and ground up seeds to the TM bowl. Mix 25 sec/speed 2
  6. Pour into a baking tin lined with greaseproof paper or into a brownie tin
  7. Bake for 20-25 minutes until golden brown on top
  8. Cut into 6 large or 12 smaller portions whilst warm but cool fully before removing from the tin.
