Apple and Apricot Flapjack – No Butter or Refined Sugar

A moist and autumnal flapjack without added butter nor refined sugar.

 300 g apples, peeled cored and diced
 300 ml apple juice
 1 tsp cinnamon
 1 tbsp chia seeds
 175 g oats
 50 g chopped dried apricots
 ½ tsp oil to grease baking tin

Preheat the oven to 180 degrees centigrade (fan-assisted) or 200 degrees centigrade

Place the apples, juice and cinnamon in a pan and heat until simmering then simmer for about 15 minutes until apple is soft

Mash the apple down using a potato masher then stir in the chia seeds, oats and then the chopped dried apricots

Push the mixture into 9 brownie holes in a brownie tin or into a 20cm by 20cm baking tin (greased)

Bake for 15 -20 minutes until just starting to brown on the surface

Remove from the oven and cool before removing, slicing and serving

    Jenny, this recipe sounds lovely. Do you think the apple stewing phase could be done in the Instant Pot, and if so how long would you cook for?

      Yes it could. I do 2 mins HP with NPR for stewed apples. Remember you won’t get any evaporation so may need to reduce the liquid to about 75ml.
