Chocolate Hemp Bars

Nuts, chocolate, hemp and dates with some freeze-dried raspberries for good measure. It's both a visual treat and a treat for your taste-buds.

 165 g dates
 90 g walnuts
 60 g hemp seeds (plus another tbsp to decorate)
 2 tbsp cocoa or cacao powder
 2 tbsp almond butter
 salt
 15 g freeze-dried strawberries
 100 g dark chocolate, broken into pieces

Leave the dates to rehydrate in a bowl of freshly boiled water for a few hours, drain and then pop these into your food processor. Alternatively use rehydrated or fresh dates.

Add to your dates the walnuts, hemp seeds, cacao/cocoa, almond butter and salt. Combine on a medium - high setting.

Push the mixture into a greased and lined 2 lb loaf tin and spread out using the back of a cold/wet spoon (or into half a 20cm by 20cm baking tin with sides and push to the edges of half the tin)

Heat a saucepan with a little water in. Once simmering, pop the chocolate in a bowl over to top of the water (but importantly not touching the water) and stir until melted.

Pour melted chocolate over the top of the mixture in the loaf tin.

Sprinkle the strawberries and remaining 1 tbsp hemp seeds over the top of the melted chocolate.

Leave to cool in the fridge for a couple of hours then slice into 6 portions.

    Where can you buy freeze dried raspberries.?

      I get mine from my local refill shop gut you can buy online and from health food stores.
