Red Pepper and Cheese Egg Muffins

A delicious and quick egg muffin that's packed full of flavour. Ideal to make in the mornings before work or batch cook at the weekends. A perfect grain-free sandwich alternative.

 ¼ red pepper, finely diced
 6 cherry tomatoes, chopped
 50 ml cream
 60 g grated cheese
 4 eggs
 salt and pepper to taste

Combine all ingredients in a large bowl.

Pour the mixture into 4 muffin cases in a muffin tray

Bake at 180 degrees centigrade (fan-assisted oven) for 20 minutes
